Recipe makes 4 bagels
Ingredients for Bagel
• Dough
• Wholemeal Spelt Flour (140g)
• Baking Powder (2 tsp)
• Coconut Sugar (1 tsp)
• Sea Salt (1/2 tsp)
• Olive Oil (2 tbsp)
• 0% Fat Greek Yoghurt Fage, liquid drained (180g)
Ingredients for Egg Wash
• Egg, small to medium (1)
• Water (1 tbsp)
Ingredients for Bagel Toppings (Optional)
• Chia Seeds (1 tsp)
• Sesame Seeds (2 tbsp)
• Mixed Seeds (1 tsp)
Instructions
1) Preheat the oven to 190C
2) Line a baking tray with non-stick parchment paper
3) Mix the wholemeal spelt flour (140g), baking powder (2 tsp), coconut sugar (1 tsp), and sea salt (1⁄2 tsp) in a mixing bowl
4) Add the yoghurt to the dry ingredients and use your hands to bring the dough together
5) Once the dough is combined knead for 5 minutes in the mixing bowl
6) Divide the dough into four pieces
7) Take each dough piece and use your hands to roll it into a ball
8) Place the dough piece on a chopping board and roll it out into a long log shape piece and then loop the log into a circle shape and smooth out the surface where each end meets
9) Place the looped dough piece on the lined baking tray
10) Repeat steps 7 to 9 until all the dough has been used up
11) Prepare the egg wash by whisking an egg in a small bowl and mixing in water (1 tbsp)
12) Use a pastry brush to coat each bagel in the egg wash
13) If desired*, season each bagel with the bagel toppings
14) Bake in a preheated oven for 25 minutes
Notes
• The bagels will last approximately 2-3 days outside of the fridge and approximately 7-10 days in the fridge
• A fan-assisted oven was not used for this recipe or any Yes2HealthyEating recipe unless specified
• If a plain bagel is being made the egg wash is still required for a desired golden brown bagel
• The leftover egg can be stored in the fridge and pan-fried for another recipe
• It is highly recommended to try these bagels toasted
